I've recently had a new found love for cauliflower. It's so versatile - it pretty much takes on any flavor you give it. PLUS, it's loaded with fiber and it's nutrient heavy. I added walnuts to this recipe, because good fats are SO important for brain and gut health. Good fats keep us fuller longer and our energy levels balanced throughout the day.
You can use this cauliflower mash as a side, or eat the whole thing like I do - because it just tastes SOO good.
INGREDIENTS:
1 head cauliflower
1/4 cup walnuts
3 cloves garlic
1/2 cup almond milk
sea salt + black pepper to taste
2 TBS EVOO
INSTRUCTIONS:
1. Roughly chop up cauliflower head
2. Place in a pot with 3/4 cup water. Cover pot on medium heat until cauliflower is soft (Approx. 15 min)
3. In a blender, add cooked cauliflower with water, walnuts, almond milk, garlic, sea salt, and 1 TBS EVOO.
4. Blend until smooth and top with some more EVOO and black pepper.
5. Enjoy with gratitude.
