Kale Cilantro Pesto


Yesterday was St.Patty's Day and of course I had to make a deliciously, clean green meal. Pun intended. Luckily, this meal takes literally 15 minutes. While the pasta cooks on the stove, the pesto will be ready to pour.

Side note: This pesto is also great for sandwiches and wraps. So make extra and use it for lunch the next day.

INGREDIENTS: 2 cloves garlic 1 juice of a fresh lime 1 cup of cilantro - with stems 1 cup of Kale 1/4 cup almonds (or cashews) 1 tbs olive oil Sea salt to taste 1 tbs or a bit more of water to blend

INSTRUCTIONS:

Blend all the ingredients together and pour over the pasta. Remember to take your time enjoying the meal, chew 10-12 times before swallowing for better digestion. (I used gluten free pasta from TJ's)
